Breakfast Casserol

Easter brunch is one of my favorite holiday meals.  I thought I'd share my favorite go to breakfast casserole recipe.  What I love about this is that you make it the night before as its best to refrigerate overnight so in the morning you just pop it in the oven...no mess!




What you need:

1 pound mild sausage cooked and drained
2 cups milk
1 teaspoon dry mustard
6 eggs
1 1/2 cups grated cheddar cheese
1/2 teaspoon salt
2 1/2 cups dried cubed bread (I use 3 pieces of bread, cut off the crust and cut into cubes, leave them out for a few hours to dry out)

Mix all ingredients in bowl, and pour into a pan, refrigerate overnight for best results.

Bake uncovered at 350 for 45 min in 9x9 pan....if you are adding veggies, like I did with the broccoli or spinach I recommend on using a larger pan.

On a side note- if you are going to use fresh broccoli, steam it slightly before mixing into the casserole, this way its nice and tender once the dish is cooked.
